Transportation of above temperature meat

The Hygiene legislation previously allowed the UK to transport meat before it has been chilled at a slaughterhouse, if this meat was intended to produce specific products and if authorised by the Food Standards Agency (FSA).

A change to the legislation last year has controlled the application for the exception the transport of meat, intended to be used for the production of specific products only to when such transport is acceptable for technological reasons.  This new regulation (Regulation (EU) 2017/1981) came into force on the 21 November 2017, however, the FSA delayed the implementation to allow industry to make changes to their operations and, where required, alter their storage facilities. This temporary period ended on the 31stOctober 2018.

The regulation made three key changes : -

  • Firstly, the exemption for the transport of meat is intended to be used for the production of specific products and can only be used if such transport is acceptable for technological reasons.
  • Secondly, it introduced more flexible approaches to the temperature conditions during transport of carcases or part carcases (half carcases, quarters, or half carcases cut into three wholesale cuts). 
  • Finally, carcases or part carcases which have been transported taking advantage of the exemption immediately above may be boned and cut prior to reaching a core temperature of 7°C at the establishment of destination, provided the air temperature ensures a continuous decrease of the temperature of the meat and it is chilled until it reaches 7°C, if not already below.
